It’s the time of the year where we’re shivering in the cold and hoping that our Oodies will keep us warm. With the rising cost-of-living, we are here to help you cook nutritious meals on a budget.

Here are 5 budget-friendly, easy to cook, healthy recipes to try this winter:

1: Classic pumpkin soup

A warm bowl of pumpkin soup will never disappoint!  Pumpkins are in season, so they are exceptionally sweeter and tastier.  What’s more, with this recipe, you’ll be getting your recommended daily serves of vegetables.

Cost per serve: $1.80*

2: Vegetable congee

Congee, an Asian staple, is a warm and nourishing dish that proves to be a crowd-pleaser. This dish is simple, easy to digest and a good way to use up your leftovers!

Cost per serve: $3.46*

3: Red lentil soup

Our red lentil soup is a great way to increase your legume intake.  Lentils are good sources of protein and fibre, and they count towards your vegetable intake. They are easily found in supermarkets and can be bought dried or canned. Lentils have a long shelve life, so you won’t have to worry about them going off.

4: Tofu korma

Tofu is a nutritious source of protein that costs less than meat. It is versatile and celebrated for its ability to absorb flavours.  This tofu korma recipe is a dish you can eat with rice, bread, naan or on its own. It can also be prepared in bulk and frozen, saving you time for another meal.

5: Vegie pasta soup
