100g dates, pitted
100g margarine*
3 tbsp honey or maple syrup
2 ripe bananas, mashed
1 apple, peeled & grated
100ml hot water
250g rolled oats
100g raisins
75g dried apricots
100g pepitas
You can swap:
Step 1
Pre-heat the oven to 160oC. Line a 20cm x 20cm slice tray with baking paper.
Step 2
Place dates in a bowl and just cover with boiling water. Leave to soak for 5 minutes.
Step 3
Place the dates along with the water into a blender and process until smooth.
Step 4
Heat the margarine, honey or maple syrup in a small pan until melted.
Step 5
Add the mashed banana, apple and 100ml hot water to the margarine mixture and mix. Add the processed dates and mix again.
Step 6
Place the oats, dried fruit and seeds into a large mixing bowl.
Step 7
Pour in the wet mixture and stir until combined.
Step 8
Tip into the slice tray and level the surface.
Step 9
Bake for 55 minutes or until golden.
Step 10
Leave in the tin to cool, then cut into 16 bars.
