Pizza muffins

  • 1 serve of vegetables per muffin

Ingredients

1 English muffin per person
1 tbsp pizza sauce or tomato paste
¼ cup grated reduced-fat cheese
Vegies of your choice, finely chopped

Vegetable ideas

Raw:
Baby spinach
Shallots
Olives
Mushrooms
Corn
Garlic
Bean sprouts

Cooked:
Eggplant
Broccoli
Pumpkin
Sweet potato
Zucchini
Cauliflower
Potato

You can swap:

English muffins
Bread rolls, pita bread or bread crusts

Tips

  • This is a simple recipe that kids can help make. They are more likely to eat things they have helped make. 
  • Choose wholemeal muffins for a fibre boost. Eating a diet high in fibre can help reduce your risk of bowel cancer. 
  • Reduced-fat cheese is lower in saturated fat but still provides calcium. Calcium is important for children’s growth and development.  

  • This is a good recipe for using up leftover cooked vegetables. 
  • This is a good recipe for using up any type of bread as the base.  
  • Leftover muffins can be frozen. 

  • Choose vegetables in season as they will be more readily available, of higher quality and better value. 

Method

Step 1
Preheat oven to 200oC (180oC fan-forced). Line a baking tray with baking paper.

Step 2
Cut each muffin in half so you have two rounds. Place muffins, cut-side up, onto the baking tray.

Step 3
Spread with sauce and top with your favourite vegies.

Step 4
Sprinkle with cheese and place in the oven for five minutes or until cheese has melted.


Serving suggestions:

  • Experiment with any leftover veg. 
  • Aim for ¼ cup vegetable topping per half muffin 

Food safety tip: If you are packing leftovers for lunch, the pizzas need to be kept cold so pack an ice brick.
