3 avocados, peeled & deseeded
½ small red onion, finely diced
1 bunch fresh coriander, finely chopped (optional)
6 cherry tomatoes, finely chopped
1-2 limes, juiced
Pinch of salt
Cracked pepper to taste

Savvy swaps

You can swap:

Cherry tomatoes
1 chopped tomato



Step 1
In a bowl, mash the avocado with a fork.

Step 2
Fold through the onion, coriander (if using), tomatoes and half the lime juice. Season with a pinch of salt and pepper.

Step 3
Taste and add more lime juice if required.
