500g lean beef mince
½ 400g can no-added-salt red kidney beans, drained, rinsed
1 small red onion, chopped
¾ cup corn kernels
2 tbsp coriander, finely chopped
½ tbsp our healthy taco seasoning mix (see below)
½ cup our Mexican salsa
Olive oil spray
Healthy taco seasoning mix
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
2 tsp paprika
6 tsp ground cumin
1 tsp salt
½ tsp ground pepper
Mix everything together in a small bowl. Store in an airtight container until required.
This mix can be stored in a airtight jar for up to six months.

Step 1
Preheat oven to 180°C. Line a large baking tray with baking paper.
Step 2
Combine the beef, beans, onion, corn, coriander, taco mix and salsa in a large bowl. Mix well. Form into 2.5cm round balls or 20 round balls.
Step 3
Place on baking tray. Spray with oil. Bake for 20 minutes or until cooked through.
Serving suggestion
Food safety tip: If you are packing for lunch, meat needs to be kept cold so pack an ice brick.
