Ricotta, tomato and avo turkish sandwich

Ingredients

100g fresh ricotta cheese
1 small avocado, mashed
½ lemon, juiced
1 punnet cherry tomatoes, halved
½ tbsp fresh thyme leaves, destemmed
½ tbsp olive oil
Ground pepper, to taste
4 pieces of Turkish bread, split

Ricotta cheese
Cottage cheese
Fresh thyme
Dried thyme
Turkish bread
Any bread, wrap or roll
Fresh lemon
1 tbsp bottled lemon juice

Tips

  • This recipe is a good source of fibre. Eating a diet high in fibre can help reduce your risk of bowel cancer.
  • Avocado provides Vitamin E. Vitamin E is important for children’s growth and development.
  • Ricotta cheese provides calcium. Calcium is needed for healthy bones and teeth.

  • You can juice the leftover lemon and freeze for later use.
  • Use leftover ricotta to make our carrot and ricotta dip.

  • You can use sliced tomato if cherry tomatoes are too expensive.
  • Bottled lemon juice can be used to save time and money.
  • To save money try growing your own herbs, like thyme, in the garden or in pots.

Method

Step 1
In a bowl, mix the ricotta cheese, avocado and lemon juice. Spread on the bread.

Step 2
Toss tomatoes, fresh thyme, olive oil, salt and pepper in a medium bowl. Spoon on top of the ricotta and avocado mix.

Step 3
Top with the remaining half of bread.


Serving suggestion: ricotta mix can also be used as a sandwich and wrap spread.  For a delicious breakfast treat, serve on toasted Turkish bread with a poached egg.

Food safety: if you are taking for lunch, ricotta mix needs to be kept cold so pack an ice brick.
