Banana bread

Ingredients

60g polyunsaturated margarine
½ cup caster sugar
2 large or 3 small ripe bananas
1 egg
1 tsp vanilla essence
1 cup white self-raising flour
1 cup wholemeal self-raising flour
½ tsp salt
1 tsp cinnamon (optional)
170g natural yoghurt
Handful of craisins or chopped dates (optional)

Tips

  • Bananas provide Vitamin C. Vitamin C supports your immune system. 
  • Using wholemeal flour adds a fibre boost. Eating a diet high in fibre can help reduce your risk of bowel cancer. 

  • This recipe is a great way to use up bananas that are over ripe. 
  • Buy ‘Odd Bunch’, ‘I’m Perfect’ or ‘Imperfect Picks’ bananas to help reduce food waste.

  • To save money make this recipe when bananas are in season. They will be cheaper, tastier and better quality. 
  • You can save money by using home brand flour, yoghurt and sugar.

Method

Step 1
Preheat oven to 180oC. Grease and line a 10cm x 20cm loaf tin.

Step 2
Using electric beaters, cream margarine and sugar until the mixture is light.

Step 3
In a separate bowl, mash the bananas and mix in the egg and vanilla essence.

Step 4
While beaters are running, gradually add the banana mixture to the creamed mixture, beating thoroughly.

Step 5
In a separate bowl, sift the flour with the salt and cinnamon.

Step 6
Fold the flour and the yoghurt into the margarine and banana mixture.

Step 7
Fold in the dried fruit if using.

Step 8
Pour mixture into the loaf tin and bake for 1 hour or until cooked (when a skewer comes out clean).

Step 9
Cool for 15 minutes before removing from the tin.
