Carrot oat slice

Ingredients

1 cup rolled oats
200g medium sized carrots, grated
¼ cup water
½ cup grated reduced-fat cheddar cheese
2 eggs
Pinch of salt

Tips

  • Carrots provide beta carotene. Beta carotene is important for normal vision. 
  • Eggs provide folate. Folate supports your immune system. 
  • Oats and carrots provide fibre. Fibre keeps you fuller for longer. 

 

  • You don’t have to peel the carrots, just wash well. 
  • Store in an airtight container or freeze the cooked slice in two layers with baking paper between each layer.  

  • You can save money by using home brand oats and cheese. 
  • Buy ‘Odd Bunch’, ‘I’m Perfect’ or ‘Imperfect Picks’ carrots to save money. 

Method

Step 1
Pre-heat the oven to 180oC. Line a 20cm x 20cm slice tray with baking paper.

Step 2
Blend oats in a food processor until a smooth powder.

Step 3
Mix the carrot and water in a bowl, cover and microwave on high for 3 minutes.

Step 4
Drain and place on a clean cloth or paper towel and squeeze out the liquid.

Step 5
Place carrots in a bowl and mix with the oats, cheese, eggs and pinch of salt.

Step 6
Pour into the lined slice tray and smooth evenly.

Step 7
Bake for approximately 15 minutes or until golden and cooked through.

Step 8
When cool, cut into 12 slices.
