Tips

  • This recipe provides fibre. Eating a diet high in fibre can help reduce your risk of bowel cancer.
  • Bananas provide folate. Folate supports your immune system.

  • Freeze bananas that are beginning to get overripe so they are ready to make ‘nice’ cream.
  • Store ‘nice’ cream in an airtight container in the freezer, for up to 3 months. Leave at room temperature for 10 minutes before serving.
  • Buy ‘Odd Bunch’, ‘I’m Perfect’ or ‘Imperfect Picks’ bananas to help reduce food waste.

  • Buy bananas when they are in season or on special and freeze for later use.
  • You can save money by using home brand frozen fruit.

Method

Step 1
Process the frozen fruit and vanilla essence (if using) in a food processor until smooth and creamy (this will take a few minutes).

Step 2
Eat the ice cream immediately for a ‘soft-serve’ consistency. Or, transfer the ice cream to a freezer-proof container and freeze it until solid, for a ‘traditional’ ice cream consistency.

Serving suggestion: serve topped with fresh berries.

Freezing tip: peel the bananas and break into chunks. Place in an air-tight container and freeze for 3 hours or until frozen.
