Ginger and apple loaf

Ingredients

2 cups wholemeal self-raising flour
â…“ cup sugar
2 tsp ground ginger
1 tsp mixed spice
60g margarine, melted and cooled
2 eggs
½ cup reduced-fat milk
1 tsp vanilla extract
1 can (400g) canned apple, no added sugar

Wholemeal self-raising flour
Half wholemeal and half white self-raising flour

2 medium apples, peeled, cored and grated
Margarine
3 tbsp canola or sunflower oil
Reduced-fat milk
Unsweetened soy or oat milk
Mixed spice
½ tsp ground cinnamon and ¼ tsp ground nutmeg

Tips

  • Apple and wholemeal flour provide a fibre boost. Fibre helps keep you fuller for longer. 
  • Canned apple with no added sugar adds natural sweetness and moisture to this cake, helping to reduce the amount of added sugar needed.
  • For a dairy-free version, use an unsweetened plant-based milk alternative and check margarine is dairy free. 

  • This cake freezes well. Slice before freezing, place a piece of baking paper between each slice so that they don’t stick together, and store in an airtight container for up to 3 months. Thaw individual slices at room temperature for 30 minutes or overnight in the fridge. 
  • If you have leftover canned apple, store it in an airtight container in the fridge for up to 3 days and stir through porridge or yoghurt.
  • Leftover cake that is starting to dry out can be crumbled and layered with reduced-fat yoghurt and fruit for a quick dessert. 

  • Canned apple is an affordable pantry staple that adds natural sweetness and moisture. Choose no-added-sugar varieties for a healthier option. 
  • Wholemeal self-raising flour, ground ginger and mixed spice are long-lasting pantry staples. Buy home brand varieties to keep costs down.

Method

Step 1
Preheat the oven to 180°C (160°C fan-forced). Grease a loaf tin and line the base with baking paper.

Step 2
Combine the wholemeal self-raising flour, sugar, ground ginger and mixed spice in a large bowl. Stir to mix evenly. 

Step 3
In a separate bowl or jug, whisk together the melted margarine, eggs, milk and vanilla extract. Add the canned apple and stir to combine. 

Step 4
Pour the wet ingredients into the dry ingredients and stir gently until just combined – do not overmix. 

Step 5
Pour the batter into the prepared tin and smooth the surface. Bake for 40-45 minutes, or until a skewer inserted into the centre comes out clean. Allow to cool in the tin for 10 minutes before turning out onto a wire rack. 


Serving suggestion: enjoy a slice of loaf with a dollop of plain yoghurt for an extra boost of calcium and protein.
