Ingredients

1 cup rolled oats
½ cup plain flour
¼ cup plain wholemeal flour
½ cup desiccated coconut
½ cup brown sugar
2 tbsp sultanas (optional)
2 tbsp golden syrup
125g margarine*
2 tbsp water
1 tsp baking soda

* Dairy free if using a dairy-free margarine

Tips

Method

Step 1
Preheat the oven to 180°C and line a baking tray with baking paper.

Step 2
Combine oats, flours, coconut, sugar and sultanas (if including), in a bowl.

Step 3
In a separate microwave-safe bowl, combine the golden syrup, margarine and water and stir to combine. Microwave on HIGH for 25-30 seconds or until the margarine is melted.

Step 4
Whisk in the baking soda until well combined. The mixture will fizz.

Step 5
Add the syrup mixture to the dry ingredients and mix well.

Step 6
Drop tablespoons of the mix onto the baking tray, leaving space between as they will spread. Flatten with a fork.

Step 7
Bake for 8-10 minutes, until golden. Remove to a wire rack to cool.
