4 cups rolled oats
½ cup pumpkin seeds
½ cup sunflower seeds
½ cup coconut flakes, unsweetened
2 tbsp honey, warmed
1 tsp vanilla extract
1 tsp cinnamon
2 tbsp canola oil
½ cup dried apricots, chopped
You can swap:
Step 1
Pre-heat the oven to 150oC. Line two large trays with baking paper.
Step 2
Add the oats, seeds and coconut to a large bowl.
Step 3
Mix the warmed honey, vanilla extract, cinnamon and canola oil in a small bowl then pour into the oats, coconut and seeds and mix well.
Step 4
Spread the mix over the two trays. Bake in the oven for 15 minutes.
Step 5
Stir and bake for a further 5-10 minutes. Allow to cool, add the apricots and then transfer to an airtight container.
