1 cup self-raising flour
1 cup wholemeal self-raising flour
⅔ cup caster sugar
1 tsp ground cinnamon
1½ cups grated carrot
½ cup grated zucchini
½ cup sultanas
100g margarine, melted
2 eggs, lightly beaten
½ cup reduced-fat milk
You can swap:
Step 1
Preheat oven to 180°C. Line a muffin tray with muffin cases. Melt the margarine.
Step 2
Sift the flours into a large bowl.
Step 3
Stir in the sugar and cinnamon.
Step 4
Add the carrot, zucchini and sultanas and mix well.
Step 5
In a separate bowl, whisk the margarine, eggs and milk together.
Step 6
Fold margarine mixture into the carrot mixture until just combined.
Step 7
Spoon evenly into the muffin cases and bake for 20-25 minutes or until cooked through (when a skewer comes out clean).
Step 8
Cool in the pan for 5 minutes then transfer muffins to a wire rack to cool completely.
